In the developing world, one measure of one’s ascent up the income ladder, are the pieces of meat on one’s plate. Their number grows, with growing affluence.

In the developed world, or at least, in the U.S. and Western Europe, the converse is true. The wealthy, typically, lean away from animal fresh, relishing slight, plant-based cuisines that are fat-free and light.
